Ingredients:
4 large eggs
1/4 cup milk (optional for creamier texture)
Salt and pepper to taste
1 tablespoon butter or olive oil
1/4 cup shredded cheese (optional)
Chopped chives or parsley for garnish (optional)
Instructions:
Crack the eggs into a bowl.
Add the milk (if using), a pinch of salt, and pepper.
Whisk the eggs until the yolks and whites are fully combined.
Place a non-stick skillet or a small pot over medium-low heat.
Add the butter or olive oil and let it melt, coating the bottom of the pan.
Pour the whisked eggs into the pan.
Let the eggs sit undisturbed for a few seconds until they start to set around the edges.
Using a spatula, gently stir the eggs from the edges to the centre.
Continue to stir occasionally to create soft, creamy curds.
If adding cheese, sprinkle it over the eggs once they are mostly set but still slightly runny.
Stir to combine, and let the cheese melt.
Remove the eggs from the heat when they are still slightly runny; they will continue to cook off the heat.
Garnish with chopped chives or parsley, if desired.
Serve immediately with toast, avocado, or your favourite breakfast sides.
